Ingredients: 1 TBSP Chopped Shallots
1/8 TSP White Pepper
1/2 Cup Dry White Wine
2 Cups Chef Creations Hollandaise Sauce
1 TBSP Tomato Paste
1 TBSP Chopped Tarragon
Procedure: In a small saucepan combine the shallots, pepper, and wine. Reduce over medium heat until 2 Tablespoons of liquid remain. Over medium heat, add 2 Cups Chef Creations' Hollandaise to the pan. Whisk in the Tarragon. Whisk in the tomato paste and bring to a boil. Serve over meats, seafood or vegetables.
